Gooey Granola Bars

Hi guys! I wanted to share with you one of my favorite Kid Chef recipes to get your kids involved in the kitchen. Laura posted this granola bar recipe at Heavenly Homemakers and I knew it looked like a super yummy snack that would be a great recipe for my kid chef!

Gooey Granola Bars

The title is extremely accurate. These granola bars are super gooey which is a great sensory activity for toddlers. This recipe is super easy and customizable. You can have your kids choose what additions to make to the recipe. There is only one part that an adult would need to help with, depending on the age of the kids.*

Gooey Granola Bars

Ingredients Needed:

  • 1/2 c peanut butter (or other nut butter)
  • 1/3 c honey
  • 1/4 c coconut oil
  • 1 c oats
  • 1 c (total) of any combination of : sunflower seeds, chocolate chips, dried fruit, coconut flakes etc.

Gooey Granola Ingredients

In a medium sized sauce pan melt the peanut butter, coconut oil and honey. I used chunky peanut butter to add a little crunch but creamy is fine as long as you make sure all the lumps are melted. *This is the step that an adult will need to at least assist their child. Add oats once everything is smooth. In a medium bowl, mix in additional toppings of your choice. I used coconut flakes and sunflower seeds. This would be a good time to let your helper mix all the ingredients with their hands!

If you’re making this recipe yourself, still use your hands. The coconut oil, honey and oats make for a natural hand conditioner! Once mixed, spread the granola into an 8×8 dish. My dish was 9×9 so I made sure to not fill the entire dish.

Cover with foil and toss in the fridge for 2 hours before cutting and serving. This makes for a great on-the-go snack that you could wrap up for later! This batch did not last long between Soph and I (Jeffrey won’t eat it because he hates coconut).

These bars are super tasty and have no high fructose corn syrup like so many of the store-made granola. Next time I will leave out the coconut and add mini chocolate chips so Jeffrey can have some. It would be great with dried cranberries as well! What will you put in your Gooey Granola Bars?
